The carafe hides a small pocket. Drop in a few cubes of ice and the sake chills from within, while the meltwater stays sealed off from the pour, so the last cup pours as clean as the first.

Handmade amber glass by Toyo Sasaki, the Tokyo glassmaker: a 300 ml carafe and two 80 ml cups, sized for two. Pour it near sundown and the glass catches the low light, turning the sake the colour of late-afternoon amber; after dark, under a lamp, that warm glow stays with it. Because every set is shaped by hand, the depth of the amber settles a little differently on each one.
